Diethyl malonate, also known as DEM, is a diethyl ester of malonic acid.
It occurs naturally in grapes & strawberries as a colourless liquid. Diethyl malonate has an odour reminiscent of apple, and is used in perfumes. It is also used to synthesize pharmaceutical compounds including barbiturates, artificial flavourings, vitamins B1, and B6.
